Catering Background

Prior to his career as an environmental health officer, Daryl worked as a qualified chef in high end restaurants and hotels in London, Canada, Nottingham and Devon including at the Michelin Star, Castle Hotel with Phil Vickery as the Patisserie Chef. He has also lectured at local colleges in environmental health subjects and catering. He qualified as a FE lecturer with City Guilds 7037 and a Teachers Certificate in Adult Education (Cert Ed) in 2000.

Chefs Corner

Cookery Demo's

While at Torridge DC, Daryl implemented a project called 'Chefs' Corner'. This involved cookery demonstrations by local chefs, promoting healthy eating, locally sourced food and eating on a budget. Working with local food businesses, he developed a library of videos and photographs published on Facebook (North Devon Chefs). In total approximately 60,000 people passed through all the events which included working with local schools, PETROC College, RHS Gardens, the North Devon Food Festival and Farmers Markets. The mobile kitchen equipment was donated by Torridge DC to the Northern Devon Food Bank and Learn Devon (Devon County Council) who continue to do community cookery workshops. Contact the food bank if you are delivering a community event, as the kitchen equipment is still available to use. The Reah Brothers in the photo brought along the shark, which was a bit contentious but assurance was given that it was ethically and legally line caught in accordance with sustainability principles.

Teaching Experience

Over 1000 candidates attended food hygiene training courses through Torridge District Council and delivered by Daryl Littlejohns. He also taught adults with learning difficulties and did Cookery Workshops through 'Learn Devon' and the Northern Devon Food Bank. Daryl delivered the free SFBB roll out training to Northern Devon businesses with Diplock Safety and Hygiene. He also arranged food hygiene training for non-English speaking groups using an interpreter and translated exam papers. Daryl continues to deliver regular food hygiene training through LFAS.

I worked with a team of professional chefs and catering managers flown in from the EU to manage The Games Catering, supporting local catering companies at sports venues , The Athletes Village and central processing kitchens. We managed the food safety for thousands of meals provided for athletes, actors, security, venue staff and high end hotel restaurants.
